Bokashi on a farm scale

Hi folks, 

I was wondering what to do to make proper bokashi compost with my recently mucked out dung? I have made a deep bed and added layers on top of it over winter. I have also been applying actiferm on top of it, it's now in a long wondrow and was wondering about the cover to put on it, does it need to be breathable or should it be air tight for fermentation?
